Inspired from: Zhug (Yemenite Hot Sauce With Cilantro and Parsley) Recipe
Comment: (סחוּג) Yemenite origin for this green sauce (sometimes also red) a bit similar to argentinian chimichurri. Ideally, this should fully be made in a mortar, but a small mixer is a simpler option.
Ingredients:
------------
1/4 tspn whole coriander seeds (or ground coriander seeds)
1/2 tspn whole cumin seeds (or ground cumin)
4 green cardamom pods, seeds only
4 cloves garlic, roughly chopped
4 red hot peppers, seeded, roughly chopped
1 tspn salt
30 g flat parsley
30 g cilantro
120 ml EVOO
Pepper
Preparation:
------------
Toast the cummin, the corriander seeds and the cardamon seeds (option).
Grind into a mortar to a powder.
Add all the other ingredients and pound into a paste into the mortar while slowly adding the EVOO. Do not forget to addre pepper and to adjust the salt if needed.

Use a small mixer to zap everything together, making sure to add the spices onto the chopped herbs so they do not remain at the bottom of the mixer bowl.
