Gremolata

Comment: Gremolata is a quick and easy side, ideal for ossobuco. It basically only requires three ingredients. However, gremolata is also often used, with some modifications, for other dishes, such as grilled fish. In this case, there are a few variations, the main ones of which are noted below.
It's best to use the gremolata immediately; it only takes 2 minutes to make.
Ingredients:

Flat-leaf parsley 10-13g (1 small bunch)
Garlic 2 cloves
Lemon zest 1 small
Salt pinch
Options:
--------
Anchovies 1-2 fillets
Capers 1 tbsp, well drained
EVOO (just enough)
Use either capers or anchovies, not both.
Adding EVOO makes it a sauce.
Preparation:
------------
Chop the parsley leaves with a knife
Chop the garlic with a knife
Zest the lemon (microplane)
Add a pinch of salt and mix well.
If using capers or anchovy fillets, chop them as well before adding them.
If using EVOO, mix well before use.
Use immediately.
